This is based on the Sichuan favourite, fish fragrant aubergine. The joke with that dish is that there’s no fish anywhere near it. It’s called ‘fish fragrant’ because it uses flavour combinations usually found in Sichuan fish dishes. The aubergine is deep-fried, though, which in this recipe it isn’t. I gladly yomp this on its own, though you may wish to bulk it up with some microwaved rice.
